Vegan Choco Chip Muffins

1 can pumpin
1/3 c. oil
1 c. sugar (I use raw sugar)
1/4 c. soy milk
1 tsp. vanilla
1 1/4 c. flour (I use whole wheat)
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. vegan chocolate chips (regular are fine... and I put in 1 cup!)

1. preheat oven to 350
2. stir together pumpkin, oil, soy milk, and vanilla
3. add the sugar, flour, baking powder, baking soda, cinnamon and salt. mix with a spoon - not a mixer- the batter will get too gummy
4. fold in chocolate chips
5. fill greased muffin tins 2/3 full
6. bake 22-24 minutes (it usually takes a little longer for me... watch them)

i have never made the recipe with regular cow's milk - although i'm sure it would work and be just as yummy! i figured since Dan and I love these muffins so much, i would share the recipe. they are delicious! thanks to sara for the recipe!

I'm pretty excited now that I have a recipe to use that can of pumpkin that's been in my cabinet since Thanksgiving. I'm going to try with cow's milk and let you know how it goes.
