Makes 20-24 Balls.
1 1/2 c. peanut butter
3/4 c. pure maple syrup
1 1/2 tsp. raw apple cider vinegar
1 tsp. vanilla extract
1/2 c. whole spelt flour (can substitute whole wheat flour)
1/2 tsp. baking soda
1/2 c. rolled oats
1/2 c. vegan chocolate chips (optional)
1. preheat the oven to 350. whisk together the peanut butter, maple syrup, apple cider vinegar and vanilla in a bowl. in a separate bowl, sift the spelt flour and baking soda. stir or whisk well. add the oats and chocolate chips, if using, and stir well. combine the wet and dry ingredients and stir again.
2. if you aren't using a nonstick cookie sheet or baking tray, you will have to lightly oil the tray or lay down aluminum foil or parchment paper. use a spoon to scoop out your preferred amount of batter, forming a ball. leave at least two inches in between each. it will take two trays. bake them for 8 to 10 minutes, or until they are starting to brown on the bottom (it takes me roughly 12 minutes).
