Vegan Oatmeal Cookies

I don't eat dairy anymore. Lets see if it helps to kick these chronic migraines (I feel like I've tried every other trick in the book). If it doesn't - oh well. Maybe it'll help this bulging waistline (funny how the only recipes I've posted on here so far are desserts... hmmm). Therefore, the recipes you will find on here are vegan. They are typically hand-me-down recipes from my friends Sara and Lisa. And they are yummy! My husband is picky and he loves them - therefore, I promise they're good.

3/4 c. vegan margarine (I use Earth Balance)
1 1/4 c. packed brown sugar
1/4 c. applesauce
1/3 c. soy milk
1 1/2 tsp. vanilla
3 c. quick oats
1 c. wheat flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1 c. vegan chocolate chips or raisins
1 c. nuts (optional)

Heat oven to 375. Lightly grease cookie sheets.
Combine margarine, sugar, applesauce, milk and vanilla in a mixing bowl.
Combine oats, flour, baking soda, salt and cinnamon. Mix into creamed mixture.
Fold in chips and nuts.
Drop rounded tablespoons of dough 2 inches apart on baking sheets.
Bake at 375 for 10-12 minutes or until lightly browned.
Cool for 1-2 minutes and remove from cookie sheets.
Makes 2-2 1/2 dozen.
